Easy Recipe on Plantain Chips

Image
I can barely keep my hands off homemade plantain chips. From the time I make it, it feels like I have been trapped. I keep eating and eating and eating😁😁 I only rest when it is all finished!🤩 When I want to indulge, I make plantain chips. They are irresistible! So, how do you make plantain chips? It is pretty simple. First, you peel the plantains, then you slice them thinly and you deep fry to perfection. Then you enjoy! Ingredients 3 green plantains (unripe and firm to the touch) ½ teaspoon salt Oil for frying TIPS FOR MAKING HOMEMADE PLANTAIN CHIPS Use salt water instead of sprinkling salt directly only the plantains. This ensures that salt gets into every nook and cranny of the plantain. Slice the plantains using a mandoline slicer or the slicing side of a box grater. This ensures thin even slices that will cook evenly. Also, do not gather the sliced plantains and place into the oil all at once, I have found that doing it that way leads to several plantain...

Easy method for Coconut Candy

Image
There are many snacks/desserts referred to as coconut candy but the sweet chewy Coconut Candy discussed here is the one we make in Nigeria. Though some work goes to grating the fresh coconut meat into tiny pieces, the snack itself is very simple to make. Ingredients 1 head fresh coconut with the juice 200g icing sugar (powdered sugar) Water Before you make the Nigerian Coconut Candy Break the coconut, making sure to collect the coconut juice from it. Remove the meat from the shells and grate the meat into small pieces. I use the smaller openings on this grater for this task. Make sure to grate along the meat of the coconut rather than across it. This is so that you'll have long thin coconut pieces rather than a mass of grated coconut. Directions Pour the coconut juice into the pot. Add the icing sugar (powdered sugar). Stir. Add the tiny coconut pieces and stir. Add water to the same level as the coconut pieces. Cover the pot and set to boil at high heat. Once the contents start bo...
