How to cook Nigeria fried rice with vegetables in 2019

are you finding it difficult trying to prepare the latest Nigeria fried rice with vegetables like most top eateries in Nigeria, well this i guess is your last bus stop, feel free to read to the end and i promise you you will not be disappointing.



INGREDIENTS

VEGETABLE OIL .................................. 0.200LT                                 
FINELY DICED ONIONS .......................0.140KG                                     
FRIED RICE SPICE .................................0.060KG
RICE .........................................................1KG
CARROTS (Diced ½cm× ½cm) ...............0.206KG
RED PEPPER (Diced ½cm× ½cm) ..........0.200KG
GREEN PEAS .......................................... 0.150KG
SWEET CORN .........................................0.100KG
WATER FOR STEAMING .......................0.280KG

COOKING PROCEDURE
1. Turn on the heat under the Cooking pot
2. Heat up for 1 minute
3. Add the measured oil and diced onions and fry for 2 minutes
4. Add the parboiled rice and diced carrots and fry for 5 minutes, depending on the quantity of rice
5. Stir constantly to prevent the rice from burning
6. Add the fried rice spice and fry for a further 3 minutes
7. Pour in the required quantity of water for steaming in a circular motion ensuring that the water is evenly distributed
7. Turn the heat of the burner to low and steam for 20 minutes
6. After 20 minutes, add the diced red pepper and stir
7. Allow to steam for another 5 minutes
8. Add the green peas and sweet corn and steam for a further 5 minutes.
9. Stir gently and take off the heat
10. Do quality checks on the rice – Appearance and Taste.
11 Remove the pot from the top of the burner and set aside to cool COMPLETELY before portioning



PLEASE NOTE
*If needed, sprinkle on the rice, 0.050kg (50g) of water at a time.
*Please limit stirring of rice to prevent the rice from going mushy, only stir at five minute intervals
